It's been a while since we've last touched base, but it's time to update you on what's coming up for the fall/winter season. This is a very special year for Fellini's in Keswick. This September marks the 10th anniversary of business in Georgina. Thank you Georgina for 10 great years, and looking forwards to producing exceptional wines, made by you, for another 10 years........

What's New???
New for this season is an Orange-Chocolate Port Style Wine. Rich aromas of dark chocolate are gracefully set against a frame of refreshing citrus and vanilla notes. This is a full bodied wine, which is medium sweet in finish. Enjoy your Orange-Chocolate Port with friends and family this holiday season. Quantities are limited, and this is a 6 week wine from start to bottling. Order yours today!
Also, back by popular demand and just in time for the Holiday season is the Orchard Breezin' Cran-Apple Chardonnay. This is also a limited release wine so come on in to get yours today!
We have some new line extensions to the New Cellar Classic Winery Series (with grape skins) - Old Vine Red Zinfadel and Super Tuscan both come with winery style grape skins.

RQ 2007
The 2006 restricted quantities program has been a great success. There have been many positive comments on these exceptional wines already-and many have yet to be tried. The 2007 lineup sounds equally good. The first release is a Chilean Malbex-available in December / January.
Second release is a New Zealand Unoaked Chardonnay-available in February.
The third release is an Italian.
Montepulciano-Cabernet-Merlot blend-available in March.
The final release of the RQ-2007 Wines is an Australian Bush Vine Greanache (Bush Vine meaning Old Vine)-available in April.

Wine-Poached Salmon with Capers
Serves 2
With busy schedules and weekends, here is a great recipe that only takes a few minutes to prepare!

2 salmon fillets
1/2 cup of white wine
2 tsp drained capers

Place salmon, wine and capers in a medium size frying pan. Bring to gentle boil; reduce heat, cover and boil gently for 4 minutes, depending on thickness or until fish is opaque and flakes easily with a fork. Remove salmon to serving plates. Boil liquid uncovered until slightly reduced; pour over fillets.
This recipe pears well with Chardonnay Semillon Wine. This delicious, buttery-textured wine with hints of honey and oak is the perfect match for salmon and capers. Poaching is an excellent choice for salmon fillets as the wine lets the capers add and interesting subtle taste.
